Liyuan Jianbing folds egg, vegetables, sauce and a crispy cracker into Chinese crêpes at Albert Cuyp Market. My chicken jianbing had cucumber, cabbage, salty-sweet sauce and a little chili oil.

The duck version was richer and just as crispy. Both were made fresh at the market, with the cracker bringing crunch through the middle.
