Wild boar mortadella
The special paired wild boar mortadella with homemade pesto, arugula, pistachios and plant-based stracciatella. It was rich, creamy and savory, with the arugula bringing freshness. The combination put wild game in a sandwich built around more than the meat alone, with the toppings making a clear contribution.
Pistachios and stracciatella
The pistachios gave the mortadella sandwich a welcome crunch against the creamy stracciatella. Alongside the pesto and arugula, they made the filling feel layered rather than uniformly rich. That balance of creamy, savory and fresh was the part of the special that stood out in my notes.
Pulled wild boar with BBQ and coleslaw
The second sandwich was loaded with tender BBQ wild boar and homemade coleslaw. It moved in a smokier direction, with sweetness and tang alongside the soft meat. Compared with the mortadella special, this was the sandwich for that BBQ-and-coleslaw combination, while the first leaned more on creaminess, herbs and nutty crunch.
