Handrolls in focus
My Ikkoku coverage centers on temaki: individual handrolls where the nori, rice and filling are all part of the experience. The format is different from a plate of cut maki rolls. You pick up each handroll and eat it individually, making the shape, structure and balance of the filling particularly noticeable.
What I paid attention to
Beyond the presentation, I paid attention to how the seaweed held the filling. One piece of feedback from my visit was that a more even, sturdy wrap could make the handroll easier to eat, as some of the filling fell out. Those practical details matter just as much as how a dish looks in a photograph.
Where this fits in the Japanese guide
This is the handroll entry in my Amsterdam Japanese food guide. If you are deciding between different kinds of meals, compare it with the ramen stops in the same guide rather than treating all Japanese restaurants as interchangeable. A bowl of ramen and a sequence of handrolls offer very different ways to eat. Follow the links below to explore those other places and check current restaurant information before visiting.
