From my visit
At Café Modern in Amsterdam Noord, we started with corn, miso, BBQ butter beans, almond crunch and lacto-koji beurre blanc with dashi. Slate bolete followed with plum cream, crispy chicken skin, smoked bone marrow and whey sauce.

The main was venison with pumpkin beurre noisette cream, tomatillo salsa, chard, veal jus and panisse. Hazelnut meringue, hazelnut ice cream and coffee foam finished the dinner in this former bank building.
